Old Fashioned Wine Recipes

This wine is simple and fresh and great on a hot summer day. You will need 4 pounds cucumbers (preferable home grown), 3 campden tablets, 2 oranges, 2 lemons, 7 cups sugar, pectic enzyme, nutrients, 1 package of wine yeast, and water.
First you want to wash the cucumbers leaving the skin on, and then chop them up and leave them in a primary fermentor. Now you want to wash the oranges and lemons and slice them thinly then add to the cucumbers which you can pick from your own organic garden or buy from the store. Now stir in the sugar and nutrients, pour 16 cups boiling water over mixture, stir, let cool, add pectic enzyme, and leave for about a week until the frothing stops.
Strain the mixture and then siphon into a secondary fermentor and attach an airlock. If you want to get a dry wine out of these types of old fashioned wine recipes you want to place them in a wine rack for three weeks up to three months or a year and then bottle. On the other hand if you are looking for a sweet wine you will want to rack at three weeks and add ½ cup corn syrup dissolved into 1 cup of wine.
Belgian Orange Blossom Recipe is a refreshing cocktail, from the 1930’s.
This recipe makes 1 gallon.
3 pounds orange blossom honey, 1 teaspoon acid blend, 1 teaspoon pectic enzyme,
1 Campden tablet, 1 package Montrachet yeast, 1 teaspoon yeast nutrient, 1 1/2 cups orange juice at room temperature, 1/4 teaspoon grape tannin in a large enamel or stainless steel pot, boil the hone in water (1 part honey to 2 parts water) for 10 to 20 minutes, skimming off any foam that forms then follow the instructions above.
Rhubarb Wine
12 lb Rhubarb, 1 qt White grape concentrate, 10 lb sugar, 6 quarts of hot water (make sure it is hot water), 2 tsp Yeast nutrient, 4 tsp Liquid tannin, 2 tsp Pectic enzyme, 8 Campden tablets (crushed), 8 quarts COLD water, 1 packet of Champagne wine yeast Procedure. Follow the instructions above to mix.
Blackberry Grape Wine
3-4 lbs blackberries, 12 oz red grape concentrate and water.
2-1/4 lbs granulated sugar, 1/2 tsp pectic enzyme, 1 tsp yeast nutrient wine yeast.
All that is really needed to make old fashioned wine recipes are the proper fermenting vessels, various wine yeasts and simple ingredients like fresh fruits, grapes or grape juice and sugar.
